The Blue Table Chocolates Workshop and Retail Space, designed by Arch&Type, is a 780 square foot facility located in Buffalo, New York. Completed in 2024, this project exemplifies how a thoughtfully designed space can enhance both the production and enjoyment of artisanal chocolates. Spearheaded by designers Seth Amman and Adam McCullough, the project centers around the emotional and sensory experiences associated with chocolate, moving beyond superficial aesthetics to evoke deeper connections​.

The design concept was heavily influenced by a photograph of untempered crystallized chocolate provided by client Ben Johnson. This image served as a catalyst for creating a space that embodies comfort, mystery, warmth, and decadence. To translate these qualities into the built environment, the designers selected materials that convey a rich, textured atmosphere. Soft matte white oak, lime-wash paint, large aggregate concrete, mirrored metal, and gold accents were used to create an inviting and luxurious ambiance​.

Unique design features include the parametric river ceiling, which adds a sculptural element to the space. Originally intended to be a seamless mirrored plane, the ceiling evolved into a more dynamic form that better captures the essence of molten chocolate. Additionally, brass accents along the casework and wall bases further enhance the luxurious feel of the space.

One of the primary challenges of the project was maximizing functionality within a compact footprint while maintaining an elegant aesthetic. The space was designed to be adaptable, with custom doors that can reconfigure the layout depending on the needs of the day. This flexibility allows the workshop to seamlessly transition from a production space to an intimate retail environment. A large marble table in the center of the showroom serves multiple purposes, including chocolate making and sales, optimizing every square foot of the interior.

The workshop’s construction involved a collaborative effort, utilizing local resources and craftsmanship. The general contractor managed the coordination of walls, electrical work, and lighting, while custom millwork was handled by McCullough and Mark Amman in local workshops. The University at Buffalo’s SMART fabrication factory played a crucial role in producing the parametric ceiling tiles, blending robotic precision with hand-crafted techniques.

It stands as a testament to the spirit of Buffalo, showcasing local craftsmanship and innovative design. The project not only enhances the Blue Table Chocolates brand but also contributes to the vibrancy of its urban surroundings.
